Ho See Fatt Choy (Braised Oysters and Sea Moss)

Introduction

Ingredients

  • 2 tablespoons of Shaoxing wine
  • 1/4 cup of water
  • 1/4 cup of sugar

Instructions for Preparation

  1. Start by preparing the oysters. Scrub them thoroughly with a brush and remove the beards. Rinse the oysters under cold water and set them aside.

  1. Soak the sea moss in a bowl of cold water for 30 minutes. Rinse and set aside.

  1. Heat the sesame oil over medium-high heat in a large pan. Add the ginger and garlic and sauté for 1 minute.

  1. Add the oysters to the pan and cook for 3 minutes.

  1. Add the Shaoxing wine, soy sauce, and water to the pan and boil.

  1. Add the sea moss, sugar, salt, and white pepper to the pan and reduce the heat to low.

  1. Simmer for 20 minutes, stirring occasionally.

  1. Serve hot.
