Take a pot, add sugar (1/4 cup) and egg yolks (3). Stir with a spoon. Heat milk (1 cup) in a saucepan and sprinkle vanilla bean (1/2). Cook until the mixture starts to boil. Remove slowly and add egg mix while whisking well. Put the pan back on the stove and dash Irish moss. Cook and whisk constantly until it thickens. Remove from heat and stain. Cool in refrigerator and serve cold.

  • Strawberry Rhubard Compote

Take a large saucepan and add rhubarb (2 cups), sugar (1/4 cup), orange juice (3 tablespoons) and zest to a simmer. Cook for 2-3 minutes while stirring continuously. Add strawberries and sea moss and cook for 2 minutes more. Remove from heat, cool and serve cold.
